Aloo Egg Curry | Potato Egg Curry | Aloo Anda Curry | Egg Gravy | Egg Curry | Eggs and Potato Curry | Egg Masala Curry | Simple Egg Curry Recipe


Ingredients for Aloo Egg Curry:

- Boiled eggs- 4-5
- Potatoes, medium sized, peeled and halved- 4-5

To mix in the boiled eggs & peeled and halved potatoes:
- Salt- 1/4 tsp
- Turmeric powder- 1/2 tsp

- Onion, fine chopped- 2 medium
- Ginger garlic paste- 2 tsp
- Tomatoes, chopped- 2 medium

Whole spices:
- Bay leaf- 2
- Dried red chilli- 3
- Cumin seeds- 3/4 tsp
- Cardamom- 3
- Cloves- 4
- Cinnamon- 2 small sticks

- Turmeric powder- 1 tsp ( 1/2 tsp to mix in the potatoes & eggs before frying & balance while cooking)
- Red Chilli powder- 1 tsp
- Cumin powder- 1/2 tsp
- Coriander powder- 2 tsp

- Oil- 3 tbsp
- Salt- 3/4 tsp
- Coriander leaves, chopped-3 tbsp

Preparation:

- Fine chop the onions and chop the tomatoes and coriander leaves.

- Take a bowl and add the peeled, halved potatoes and boiled eggs. Add 1/4 tsp salt and 1/2 tsp turmeric powder. Keep aside for 10 mins. Take a kadai/pan and heat the oil.
- Add the potato halves and fry on medium to low heat for 5 mins till they are golden.
- Remove and then add the boiled eggs. Fry till golden. Remove and set aside.


Process:
- Heat the same oil left over after frying the eggs and add the cumin seeds.
- Once it splutters, add the whole Garam Masala and the bay leaves.
- Add the chopped onions, mix well and add 1/2 tsp salt. Fry the onions on medium heat for 8 mins till golden.
- Add the ginger garlic paste and fry on low heat for 2 mins.
- Add the chopped tomatoes, mix well and fry for 2 mins. Add the turmeric, red chilli, coriander and cumin powder. Mix well and add a splash of water. Fry on low heat for 8 mins till the spices are cooked, tomatoes are soft & pulpy and oil separates.
- Add the fried potatoes & mix well and fry for 2 mins. Now add around 225-250 ml of water, give a stir & add the Garam Masala powder.
- Add 1/4 tsp salt , mix again & cover and cook on low heat for 10 mins.
- Remove and add the fried eggs, mix and simmer for 2 mins.
- Garnish with chopped coriander leaves.
