INGREDIENTS
- 225g plain chocolate
- 2 tbsp golden syrup
- 50g unsalted butter
- 75g cornflakes
- 2 bags of Mini Eggs

METHOD
1. Add the chocolate, butter and golden syrup to a bowl over a pan of simmering water making sure that the bottom of the bowl does not touch the water.
2. Mix gently until the mixture has melted and become smooth.
3. Remove the bowl from the heat and pour in the cornflakes.
4. Mix thoroughly so that all the cornflakes are coated in the chocolate mix, taking care not to miss the ones at the very bottom of the bowl.
5. Using a tablespoon spoon into cupcake cases and top with 3 mini eggs per cake. Push these down gently to keep them secure but take care not to press too hard or your cornflakes will spill over the edges.
5. Enjoy warm and gooey, or place in the fridge for an hour for firmer cakes.
